My house smells great this afternoon. I’ve discovered my crock pot! I hope it’s a good discovery; we haven’t eaten yet. But really, dumping all the ingredients in a pot and opening it up hours later to a ready meal is pretty smart. The only problem is that I fail at crock-potting already because it’s hard to leave it alone! I am a person who needs to stir, poke and otherwise be very actively involved with my food. Letting it sit is not as easy as it sounds. At least not for me. All I can really do is keep touching the outside of the pot to make sure it’s working, and then I get burnt.
If you have a favorite crock pot recipe, please share! If this turns out well, I’m going to need lots to try because I think making dinner in the morning is fabulous. Max doesn’t do so well without attention in the evenings.
PS I am still mentally on hiatus, blog-sabbatical, off at my Walden Pond. But when things come up that just should be shared - like feeling loved after you hang up the phone on a Sunday evening - then they’ll be here.
PPS I keep remembering this and it makes my week every time!

I am a firm believer in crock pots…but never find myself prepared enough to actually be able to fill it first thing in the morning.
I too love to poke, prod and stir, but I haven’t found it to be too damaging.
What are you putting in your crock pot?

I love my crock pot too! But, like Amanda, I rarely have all the ingredients I need the morning I decide to use it, so it often only sees food on my days off! The most delicious thing I make in it isn’t really a meal, it’s a dip, but it’s really good! John’s mom taught me! There are lots of crock pot cookbooks out there though, so I know there must be a ton of recipes on the web!

O.K., are you ready for two easiest peasiest recipes I have?
Shelby Chicken (named after my sister who “invented” this)
3-4 Chicken breasts (can be frozen)
1 can cream of chicken soup
3 T. teriyaki sauce
Cook 7-8 hours or so (especially if frozen). Sounds a little strange, but it is oooh, so good! I serve with rice or potatoes and veggie. (All of which takes very little time before dinner.)
Ready for the next? It’s only two ingredients.
BBQ Ribs or Pork Loin Roast
1 lb. ribs cut individually or roast
1 cup or so of BBQ sauce
Cook 7-8 hours or so. Serve with rolls, salad, mashed potatoes, whatever you please. YUM.
There you go. Those are the two recipes I know off the top of my head (gee I wonder why!) Happy Crockpotting!
Wait! Wait! Wait! I have one more I remember that is a two to three ingredient one!
Chicken Tacos
3-4 Chicken breasts (can be frozen)
AND either:
1 can Rotel Tomatoes (tomatoes and chilies)
1/2 packet taco seasoning
OR:
1/2 bottle of salsa
Cook 6-7 hours. Shred chicken. Serve with tortillas, cheese, lettuce, whatever you want.
There, now I can end.

My fav crock pot recipe is my favorite because its the only one I have cooked in a crock pot. Buy a pork from costco, throw in a packet of Liptons onion soup, and you are done. Great sunday dinner with salad and rolls, and it cooks while you are at church. Perfect!
